I’m excited to announce a brand new monthly series here on The Baker’s Almanac called What’s On My Plate!
Personally, one of my guiltiest pleasures is watching ‘What I Eat in a Day’ Youtube videos. Scratch that—I just love watching any and all Youtube videos in general.
I feel like it’s because I find most Youtubers so relatable, and I like to find one person and stick with their content religiously. I definitely have a few channels that I’m obsessed with, and I immediately watch their videos when they upload new ones. Does anyone else understand my obsession?
Because of that, I thought it might be fun to start a new series showing you what I eat on an average day each month. No frills, nothing fancy—just typical foods that I love to eat on a day-to-day basis.
Initially, I wanted to give you a glimpse into what I eat on a typical work day, but I’m not really allowed to take pictures or film at work. Instead, I’m going to give you a peek into what I eat on one of my days off work.
This day started off with one of my all-time favorites lately: chia pudding with homemade granola and fresh berries.
This week, I made a huge batch of chia pudding, and I also baked some homemade granola with mixed nuts, coconut chips, and oats. I love this breakfast so much because it only takes me two minutes to put together, and it’s so delicious! Chia pudding is also great because it’s super healthy for you but tastes like a dessert.
In case you’re interested, I used my Coconut Matcha Chia Pudding recipe but simply took out the matcha powder. I highly recommend this recipe, and I know I’ll be making it for many weeks to come.
Okay… I got a bit lazy. During the morning, I spent some time working on a blog post, then I cleaned my entire apartment and did the laundry. Once noon rolled around, I had no energy to cook lunch, so Chipotle started to look like my best (and perhaps only) option.
I wanted to stop by Whole Foods to pick up some ingredients for dinner, and Chipotle is across the street, so… of course I had to get it! I feel like I eat Chipotle at least once a week, but I ain’t mad about it.
Here’s my go-to order at Chipotle: burrito bowl with white rice, chicken, mild salsa, lettuce, cheese, and sour cream on the side. Sometimes I’ll splurge and get the tortilla on the side as well, but I don’t do this every time.
I like a lot of the other options like black beans and the corn, but they oftentimes upset my stomach. Stick with what works for you, right?
I was looking forward to this dinner all day, and it did not disappoint! My boyfriend and I decided to make some Brown Butter Scallops with Parmesan Risotto, and it was honestly one of the best meals I’ve cooked in a long time.
The best part is that this whole meal took less than fifteen minutes to make! We put the risotto on and let it cook gradually, then we quickly prepared the scallops and spinach.
I think this would be a really delicious recipe to make for a dinner party or if you had a small group of friends over. You know a recipe is good when you are already planning when to make it next, right?
Given I run a baking blog, you probably aren’t too surprised that most of my nights end with dessert. I always joke that I have a second stomach for dessert, and sometimes I have to keep myself from eating a piece of cake every night.
As I tend to do most nights, I sipped on a mug of Oat Milk Matcha Latte after dinner. Honestly, this drink is so addicting! I love winding down my night with a big cup of it and a bit of chocolate.
To satisfy my nightly sweet tooth, I had a few squares of the Orange Dream Vanilla Cashew Butter Hu Chocolate, and it did the trick. I love this chocolate because it’s so rich, but you don’t have to eat a lot of it to get the great flavor.
Finally, I also snacked on a couple of grapes because they looked so delicious. Perfect end to a relaxing day off of work!
